Vegetables - Yams - Pear Yam Salad

This recipe is a fall favorite. The slightly sweet spicy dressing mixed with the toasted pecan flavor makes the yams and pears perfect partners.

2 lbs. sweet potatoes (yams), peeled and cubed
3 fresh pears
2 tbsp. lemon juice
1/4 cup toasted pecans
1 cup chopped celery
1/3 cup raisins
1/3 cup light mayonnaise
1 tbsp. honey
1/2 tsp. ground nutmeg/ginger
Salt to taste

In a saucepan, cook the yams for 8 to 10 minutes in boiling water just until tender. Do not overcook. Drain; set aside to cool. Core the pears and cut into chunks. Toss the pears with the lemon juice and mix with the cooled yams in a large bowl. Add the pecans, celery and raisins, mixing gently.

In a small bowl, mix together the mayonnaise, honey, nutmeg/ginger and salt. Pour the dressing over the yam-pear mixture, mixing gently to coat the salad. Serve immediately or refrigerate. Makes 8 servings.

2 cups peeled and thinly sliced sweet potatoes 1 cup sliced carrots 1/2 cup orange juice 1 teaspoon orange peel, grated 1 teaspoon lemon juice 1 teaspoon cornstarch 1 tablespoon water 2 tablespoons Texas pecan pieces Boil or steam sweet potatoes and carrots until tender. When they are almost finished cooking, heat orange juice to boiling in a saucepan. Add orange peel and lemon juice. Dissolve cornstarch in water; add to orange mixture. Continue to heat, stirring until thickened. Remove vegetables from pan; place them in a serving dish. Drizzle orange sauce over them; sprinkle pecans on top. Makes 4 servings.

Two (2-lb 8oz.) cans of yams, drained, or 4 lbs. cooked, peeled fresh 2/3 cup orange juice 1 Tbl. grated orange rind 5 Tbl. brandy or rum 2 tsp. salt freshly ground pepper to taste 1 tsp. ground ginger 4 Tbl. butter, melted 1/3 cup light or golden brown sugar, packed 3 egg yolks Preheat oven to 350 degrees F.Grease a large casserole dish.Beat yams till smooth.
