Vegetables - Spinach, Basil And Ricotta Puree

2 (10 oz.) pkg. fresh spinach leaves
3/4 cup fresh basil leaves
3/4 cup whole-milk ricotta cheese
2 tbsp. unsalted butter -- 3/4 stick
1 clove garlic -- minced
1/4 cup whipping cream

Bring 2 cups water to boil in a large pot. Add spinach leaves and stir until tender and bright green, about 3 minutes. Drain well. Squeeze out excess water.

Transfer spinach to processor. Add basil and ricotta to spinach. Blend until smooth. (Can be prepared 8 hours ahead. Cover and refrigerate.)

Melt butter in heavy medium saucepan over medium heat. Add garlic and saute until golden, about 3 minutes. Add spinach mixture and cream. Stir until mixture is just heated through. Season to taste with salt and pepper.

Transfer to bowl and serve.

(10-ounce) fresh spinach, cleaned and torn into bite-sized pieces 1 small bunch watercress, cleaned and finely chopped 1 pint cherry tomatoes 1/2 pound bacon, cooked and crumbled 1 medium red onion, sliced into thin rings 1 large red pepper, sliced into thin strips 1 can (2.2-ounce) pitted ripe olives, drained 1 cup Gorgonzola or blue cheese, crumbled (I usually don't use) Toss spinach with onion, bacon, red pepper, tomatoes and olives; Toss with dressing.
