Vegetables - Cucumber - Cucumber Appetizers

1 English (Hothouse) Cucumber -- Sliced 1/3" Thick
Dill Weed, Fresh -- Finely Chopped
Seasoned Salt (Lowerys)
Bread Slices (Any Type) -- Cut- Various Shapes

With an English (seedles) cucumber you can either peel it, leave it unpeeled or run the tines of a fork down it to make a design. Cut the cucumber into fairly thin slices (1/3 inch). Sprinkle a little Lowerys seasoned salt on the cucumber slices and let them sit a while.

In the mean time, cut the bread slices into fairly small shapes (round, heart, square, etc.) and spread each slice with some mayonnaise.

Place a cucumber slice on top and sprinkle with fresh dill. If you like you can also top the cucumber slice with a bit more mayonnaise and then add the dill.

Serving Size: 8 3 cucumbers 8 ounces lemon yogurt, lowfat 1/2 cup chopped walnuts 1/2 cup currants 4 green onions, chopped 1/4 teaspoon salt 1/4 teaspoon mint flakes 1/4 teaspoon basil leaves Peel cucumbers; halve lengthwise. Remove seeds and cut into 1/4 inch slices. in medium bowl, combine all ingredients. Stir gently and then refrigerate. Stir just before serving. Serves 8.

3 fresh ripe Cucumbers 2 packages Cream Cheese with Chives (3-oz. ea.) 1/4 cup Pimiento-stuffed Olives Allow cream cheese to soften while you finely chop the olives. Cut each cucumber in half length-wise. Scoop out the seeds with a spoon or melon baller, and discard. Divide the cream cheese mixture between the cukes, filling in the hollows (where the seeds used to be). Restore each cucumber to its original shape by pressing halves together firmly. Wrap each in plastic film, and chill until almost time to serve. At that point, remove from refrigerator and - with a sharp knife - carefully
