Vegetables - Cheese And Garden Vegetable Pie

1 (9 inch) deep dish pie shell
3 medium vine ripened tomatoes
1 small yellow onion
1/4 cup diced green pepper
3/4 cup mayonnaise
1/2 cup grated sharp cheddar cheese
1/2 cup grated mozzarella cheese
3 slices bacon, cooked
2 slices additional bacon, garnish

Preheat oven to 350 degrees F (175 degrees C).

Bake the pie shell for 9 to 10 minutes or until browned.

Cut the tomatoes into bite size pieces, dice the onion and the green bell pepper. Crumble the bacon.
In a large bowl, mix the mayonnaise, cheeses, vegetables and bacon. Spoon into the baked pie shell. Top with additional crumbled bacon.

Bake at 350 degrees F for 25 minutes or until edges brown.

1 onion, chopped 1 (10 3/4 oz.) can cream of mushroom soup 1 (10 3/4 oz.) can cream of chicken soup 1 (8 oz.) jar Cheez Whiz 2/3 cup milk 1 cup Minute rice 1/2 cup water 2 pkg. frozen broccoli, cauliflower and carrots (California brand) Brown onion in butter and add soups, Cheez Whiz and milk. Cook until cheese melts. In a 9 x 13-inch dish, layer rice, water, vegetables, pour soups mixture over vegetables and bake at 350 degrees for 45 minutes uncovered.
