Sauces - Fruit - Apple Brandied Cranberry Sauce

2 C fresh cranberries
1 c sugar
1/4 c Apple Brandy (Calvados), or Apple jack if you can not find


Put into a glass baking dish, and bake in a preheated 275 degree oven, stir every so often. Make sure you cover with foil too. Bake for approx 1 1/2 hours to 2 hours. It is best to make up to 6 weeks early. It mellows as it ages, and gets better, and better.

1 cup chopped onions 1 to 2 serrano chiles, minced 2 tablespoons corn oil 1 teaspoon ground cumin seeds 1 teaspoon ground coriander seeds 1 large tomato, seeded and diced fine (about 1 cup) 2 teaspoons unbleached white flour 1 cup plain yogurt Salt to taste Saute the onions and chiles in the oil until tender, about 10 minutes.
