Sauces - Fresh Cranberry Relish

4 cups (1 lb.) fresh cranberries
2 medium red apples, unpeeled and cored
1 large orange, quartered, pitted
2/3 cup honey


Wash cranberries, drain, and remove stems.

Alternately put cranberries, apples, and orange quarters through food chopper or blender. Blend in honey, combine thoroughly.

Refrigerate, covered, several hours or overnight before serving.

Makes 1 quart.

1 package (12 oz) fresh or frozen cranberries (*If using frozen, do not thaw) 1 cup sugar 1 cup water Mix sugar and water in saucepan. Stir to dissolve sugar. Bring to boil, add cranberries, return to boil, reduce heat. Boil gently for 10 minutes, stirring occasionally. Remove from heat. Cool completely at room temperature and refrigerate. Makes around 2 1/4 cups.

5 cups (about 11/4 lb.) fresh or thawed frozen cranberries 1 orange (1/2 lb.) 3/4 cup sugar Sort cranberries, discarding any bruised or decayed fruit. Rinse berries. Rinse orange and cut into 1-inch chunks; discard any seeds. In a blender or food processor, whirl orange, 2 cups cranberries, and sugar until puréed. Pour purée into a 2- to 3-quart pan over high heat. Stir until mixture is boiling rapidly and begins to thicken, about 5 minutes. Add remaining cranberries and stir just until they begin to pop, about 5 minutes longer. Pour into a bowl. Serve warm or cool. YIELD:
