Salads And Dressings - Potato - Southwestern Potato Salad

1 1/2 pounds small red potatoes -- halved
1/2 cup mayonnaise
2 tablespoons lime juice
1 1/2 teaspoons chili powder
1 teaspoon grated lime zest
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 cup grape tomatoes -- halved
2 ribs celery -- thinly sliced
3 scallions -- chopped
2 tablespoons chopped fresh cilantro


In pot over high heat combine potatoes with enough salted water to cover; bring to boil. Cook until tender, about 10-14 minutes. Drain; cool slightly, about 5 minutes.

Meanwhile, in serving bowl combine mayonnaise, juice, chili powder, zest, cayenne, garlic powder, and salt. Add potatoes, tomatoes, celery and scallions; toss until well coated with dressing. Sprinkle with cilantro. Serve immediately or cover and refrigerate until ready to serve.

10 ounces red potatoes 1/4 cup chopped celery 1/4 cup diced red pepper 2 tablespoons minced cilantro 1/4 cup nonfat mayonnaise 3 tablespoons nonfat sour cream 2 tablespoons hot salsa 1/4 teaspoon ground cumin Wash potatoes. Cover with water in large saucepan; bring to a boil and cook 15 minutes, until tender. Drain; cool completely. Peel and cut into 1/2-inch cubes. Combine with celery, pepper, and cilantro. Combine mayonnaise and remaining ingredients; mix well. Add to potato mixture; toss gently to coat potatoes. Cover and chill.

1 cup mayonnaise -- or reduced fat 1/4 cup Dijon mustard 2 tbsp. fresh lime juice 1 medium tomato -- chopped 2 tbsp. cilantro -- chopped 1/2 jalapeno -- finely diced 2 scallions (white and green parts) -- chopped 1/2 medium red onion -- thinly sliced 1/2 tsp. cayenne 1 small clove garlic -- minced salt and freshly ground pepper 16 new potatoes -- cook/drain/slice With a spatula, combine mayonnaise and mustard with remaining ingredients, except potatoes, and mix well. Season to taste and pour over warm potatoes.
