Salads And Dressings - Creamy Fruit Salad

2 egg yolks
1 Dash salt
1 tablespoon cornstarch
1/4 cup sugar -- or more
2 tablespoons lemon juice
1 cup pineapple juice or other
1 tablespoon butter
2 cartons prepared whipped topping (9 oz. each) -- thawed
2 cups seedless grapes (green or blue or combination)
2 cups pineapple tidbits -- drained
11 ounces Mandarin oranges -- drained
1 small jar Maraschino cherries -- halved and drained
1/2 cup toasted slivered almonds
2 cups pastel colored mini marshmallows


Combine thoroughly in a small saucepan the first 7 ingredients. Cook and stir over low heat until thickened. Cool thoroughly.

Fold in all of the remaining ingredients; pour into a pretty glass serving bowl. Refrigerate overnight. Garnish with small clusters of frosted grapes, if desired.

Serves 12

Makes 9 - 1/2 cup servings 1 1/2 cups chopped cranberries 1 cup chopped red apple 1 cup chopped celery 1 cup seedless green grapes, halved 1/3 cup raisins 1/4 cup chopped walnuts 2 tablespoons white sugar 1/4 teaspoon ground cinnamon 1 (8 ounce) container vanilla yogurt Combine cranberries, apple, celery, grapes, raisins, walnuts, sugar, cinnamon, and yogurt. Toss to coat. Cover and chill 2 hours. Stir just before serving. Garnish with frosted cranberries and mint leaves if desired. For frosted cranberries, wet cranberry and roll in sugar.
