Salads And Dressings - Basic Vinaigrette

1/4 cup red wine vinegar or rice vinegar
1/2 cup water
1 Tbl. + 1 tea. apple juice concentrate
1/4 tea. garlic powder
1/4 tea. onion powder
1 tea. fresh lemon juice
1 tea. tamari or low-sodium soy sauce
1/2 tea. Dijon-style mustard
Dash of red (cayenne) pepper (optional)

1/2 cup buttermilk 1/2 cup nonfat or reduced calorie mayo 1 tablespoon Dijon mustard 3 tablespoons lime juice 1 cup loosely packed fresh basil leaves Salt and pepper to taste Add all ingredients to bowl of food processor and process until basil is finely chopped. Transfer to a bowl and chill.

2 to 3 teaspoons chopped fresh herbs of choice 1 cup plain or low fat yougurt or sour cream 1 clove garlic, minced salt and pepper to taste Blend cottage cheese until smooth. Add remaining ingredients and mix until well blended.Allow flavors to blend at least overnight in refrigerator. Can be stored in refrigerator up to one month. Serve with raw veggies.
