Poultry - Turkey - Southwest Mini Meatloaf

1 1/2 lbs ground turkey
5 cups baked corn tortilla chips
1 can (101/2 oz) black beans
1 can (8 oz) corn kernels, drained
1/2 cup minced scallions
1/2 cup finely chopped red bell peppers
1 can (5 oz) evaporated milk
1 large egg
1 Tbsp chili powder
2 tsp salt
1 tsp ground cumin
1 Tbsp vegetable oil

Mix all the ingredients except the oil in a large bowl until very well blended and some of the beans are mashed. Divide the mixture in half. With one half, form 8 equal balls. Freeze on a cookie sheet until firm, then transfer to an airtight container and freeze.
Shape the remaining mixture into 4 oval loaves.

Heat the oil in a large, non stick, if available, skillet over medium heat. Brown the loaves 2 to 4 minutes, turning once. Add 1/4 cup water, cover, reduce heat and simmer 14 to 18 minutes until meat is no longer pink at the center.

Makes 4 loaves and 8 meat balls.

1 fully ripened avocado 4 corn or flour tortillas (about 6-inch diameter) 2 tablespoons mayonnaise 8 ounces cooked, sliced turkey or chicken 1 large tomato, sliced 4 ounces Pepper Jack cheese, sliced Preheat broiler. Cut avocado lengthwise around the middle; remove pit with a knife blade; twist avocado to separate halves; scoop out pulp with a spoon. Slice avocado in thin wedges. Place tortillas on broiler pan.
