Pasta And Pastasauces - Pasta - Oodles Of Noodles

1 (28 oz) (796 ml) can tomatoes
1/2 C. chopped onion
1 tsp. dried basil (optional)
1/4 tsp. (approx.) pepper
4 oz. light cream cheese, cubed
2 3/4 C. fusilli or macaroni
1/4 C. Freshly grated Parmesan cheese
salt


In saucepan, bring tomatoes, onion, basil and pepper to boil; reduce heat and simmer for 15 minutes.

Pour into food processor or blander; puree. Add cream cheese, puree until smooth.

Meanwhile, in a large pot of boiling salted water, cook macaroni for 8 - 10 minutes or until tender but firm; drain well. Toss with sauce; sprinkle with Parmesan. Season with salt and pepper to taste. Makes 8 servings.

3 tablespoons butter or margarine 1/2 cup chopped onion, or 1/4 cup dried, chopped onion (opt) 2 cups macaroni 2 cups water 1/4 teaspoon dry mustard 1 teaspoon salt 1/2 teaspoon pepper 3 tablespoons flour 1 (12 oz.)can evaporated milk, or 2 cups milk 2 cups shredded or cubed cheddar cheese -- sharp is best Melt butter and stir in macaroni and onion. Saute a few minutes until onion begins to cook. Add water and boil for 7 minutes. Sprinkle with flour, dry mustard, salt and pepper. Add milk and cheese. Stir until cheese melts.
