Mixes - Vanilla Essence

4 vanilla beans
1/2 half bottle vodka
4 tbsp. sugar

Chop the vanilla beans into 1/4 inch pieces. Drop into a bottle and add the sugar. Pour in the vodka. Place it somewhere you will see it often and each time you pass give it shake.

After about 3 weeks taste and add more sugar if you feel necessary. This can last for ages if you top up with more vodka and sugar as necessary. Use just as you would ordinary vanilla essence.

NOTE: The cook has the right to lick the spoon!! It's absolutely delicious and you will never buy commercial vanilla essence again once you have tried this.

SECOND NOTE: Try a couple of tablespoons (yes, tablespoons) in a mug of hot milk as a warming winter nightcap -- magic!

To make your own vanilla extract, rub two vanilla beans with the dull edge of a knife to evenly distribute the beans, then cut the beans in half lengthwise, and place in a bottle of vodka or some other kind of liquor. Martha likes to use the very best vodka she can find. Seal the bottle, and set in a cool, dark place for four to six months, shaking the jar occasionally, until the flavor of the extract has mellowed. The clear vodka will turn a nice deep brown. 1/2 cup Brandy 3 or 4 Vanilla beans Chop vanilla beans into small pieces, being careful not to lose any of bean or little black seeds. Drop pieces into a clean jar and cover with brandy. Cover with a tight-fitting lid and keep in a dark place, shaking every 3 days or so. Extract will be ready in 2 weeks. A touch more brandy can be added if beans still seem potent. Mixture can be added to indefinitely. To use: Use just as you would regular vanilla extract, but taste to make sure brandy flavor is
