Fruit - Strawberry - Strawberry Custard Pie

1 cup sugar
1/4 teaspoon salt
1/4 cup cornstarch
2 cups milk
2 tablespoons butter
3 egg yolks—beaten
1/2 teaspoon vanilla
1 pie crust (9 inch) -- baked
3 cups sliced strawberries
2 tablespoons sugar

Mix 1 cup sugar, salt and cornstarch. Add milk slowly to dry ingredients. Add butter to the mixture and cook in a double boiler until heated.

Pour 3 tablespoons of the heated mixture into the beaten egg yolks and stir. Add the egg to the double boiler, stirring vigorously. When the custard thickens, add the vanilla and then pour into the baked pastry shell. Cool.

While the pie is cooling, mix the sliced strawberries with the 2 tablespoons of sugar and refrigerate, stirring occasionally.

After the custard has cooled, top with the sliced strawberries.
