Fruit - Strawberry Cake With Fresh Strawberries

1 cup butter or margarine
2 cups sugar
3 cups all-purpose flour
4 teaspoons baking powder
1 cup milk
4 eggs
1/4 teaspoon salt
1 teaspoon vanilla
Strawberry Cake Filling and Topping (see below)

Preheat oven to 350.

In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition.

Sift together flour, baking powder and salt. Add to first mixture alternately with milk and vanilla. Pour into 3 greased cake pans. Bake for 25 to 30 minutes. Makes three layer cakes or 36 cupcakes.

Strawberry Cake Filling And Topping:
1 1/2 quart fresh strawberries, sweetened to taste
2 cups sugar
1 pint heavy whipping cream
4 Tablespoons sugar
3/4 teaspoon vanilla

Assemble cake:
Whip cream with 4 Tbsp sugar and vanilla until peaks form.Let strawberries and 2 cups sugar stand until juicy. Spread a layer of berries and juice on first layer of cake. Cover with a layer of whipped cream. Continue with second layer in same manner, carrying whipped cream down over sides of cake. Store in refrigerator.

2 envelopes gelatin 1/2 cup cold water 1 cup mashed fresh strawberries (about 1 pint) 1 cup sugar 2 cups heavy whipping cream, whipped 1 tsp vanilla 1 cup sliced fresh strawberries *Note: If strawberries are too tart, use less, about 1/4 cup 2 packages sponge-type ladyfingers (24 ladyfingers, split) Sliced strawberries for topping In a 1-cup glass measuring cup, soften gelatin in cold water for 5-10 minutes. Place glass measuring cup in saucepan filled with 1-inch of water and heat until gelatin dissolves, stirring often. Set aside. In a small pan, heat mashed strawberries with sugar until sugar is dissolved.

1 box white cake mix 1 (3 oz.) box of strawberry Jello 3 tsp. flour 1 cup frozen strawberries, thawed 1 cup oil 1/2 cup water 4 eggs Whipped cream for frosting or Cool Whip Grease two 9 inch layer cake pans. Blend together cake mix, Jello and flour. Add oil, water and eggs (1 egg at a time). Beat well. Add frozen strawberries. Blend. Bake at 350 deg. for 40 minutes. Frost with whipped cream. Decorate with fresh strawberries.
