Fruit - Lemon Herb Rice

2 cups water
2 tbl. butter or margarine
grated zest of 1 lemon
juice of 1/2 lemon
1/2 tsp. garlic salt
1 cup rice
2 tbl. sliced green onion
2 tbl. favorite fresh herbs


Bring water to a boil; add remaining ingredients.Reduce heat, cover, and simmer 20 min. or until rice is tender.Stir in green onion and herbs.

Makes 3-1/2 cups

2 cups water 1 cup sugar 2 teaspoons grated lemon peel 1/3 cup fresh lemon juice In a medium saucepan, bring water and sugar to a boil, stirring frequently until sugar is dissolved. Remove from heat and let cool. Stir in lemon peel and lemon juice. Pour mixture into an 8- or 9-inch square pan and freeze 1 hour, or until frozen 1 inch around edges.
