Fruit - Coconut Cherry Cheesecake Parfaits

1 (3-1/2 oz.) pkg. instant coconut cream pudding mix
1 pint sour cream
1 (8 oz.) pkg. cream cheese
1/4 cup sugar
2 tsp. almond extract
1 tsp. vanilla extract
1 (21 oz.) can cherry pie filling
3-1/2 oz. shredded coconut
whipped cream (for garnish; optional)

Combine pudding, sour cream and cream cheese; whip until smooth. Slowly add the sugar and extracts. Spoon into 8 (6 ounce) parfait glasses until almost 1/2 full. Spoon in a layer of cherry pie filling, reserving 8 cherries for garnish. Spoon remaining pudding mixture onto cherry layer. Surround rim of parfait glass with whipped cream. Place flaked coconut in middle and top with a cherry.

2 cans (about 14 oz. each) of sour cherries 2 cinnamon sticks 1/2 cup sugar 1 cup red wine 1 cup cream 2 tablespoon flour Combine the cherries, their juice, the cinnamon, the sugar, and the wine in a saucepan. Heat but do not boil. Mix the flour and milk. Strain into the hot cherries. Cook until thickened. Chill.

60 maraschino cherries with stem 3 tablespoons butter or margarine, softened 3 tablespoons light corn syrup 1/4 teaspoon salt 2 cups sifted powdered sugar 1 1/2 pounds dipping chocolate or white chocolate (for coating candy) Drain cherries thoroughly. Place in paper towels. Combine butter, corn syrup and salt. Stir in sifted powdered sugar. Knead sugar mixture till smooth. (chill mixture if it's too soft.) Shape 1 teaspoon of the sugar mixture around each of the cherries. Place on waxed paper lined baking sheet; chill. In a small saucepan melt chocolate, stirring constantly. Do not add any liquid..
