Fruit - Almond Cherry Cheesecake

2/3 cup graham cracker crumbs (about 14 squares)
1/4 cup melted butter or margarine
1/2 cup slivered almonds, broken
1/4 cup sugar

8 oz. cream cheese, softened
1/4 cup sugar
2 eggs
1 cup cherries

1 pint sour cream
5 tbsp. sugar
1/2 tsp. almond extract
slivered almonds for garnish, optional
maraschino cherries, for garnish, optional

Preheat oven to 375 degrees F. Mix crust ingredients and press onto the bottom and sides of a pie pan.

Beat cream cheese and sugar until fluffy. Mix in eggs until creamy and smooth. Stir in cherries. Pour cheese mixture into pie shell and bake for 20 minutes at 375. Let pie cool 10 minutes.

Mix topping ingredients except the almonds. Pour over pie. Bake pie an additional 5 minutes at 375. Top or garnish with almonds, if used. Cool pie for 8 hours or overnight before serving. Garnish with cherries if desired.

Plump dried cherries by covering with boiling water. Let stand a couple of minutes. Drain well and toss with cherry liqueur. Drain when required or even better, let sit a couple

Crust: 1 TB sugar 1 packet graham crackers, crushed (or 1-1/3 c crumbs) 1 stick butter 1 c. sour cream {can use reduced fat} 1 c. confectioner's sugar 1 c. chopped walnuts 1/2 pt whipped cream OR 8 oz container Lite Cool Whip 1 can cherry pie filling Combine sugar, graham crackers and butter. Press into bottom of a greased 9 x 13-inch pan. Bake at 350 degrees for 8 minutes.Combine sour cream and confectioners sugar and pour onto hot crust. Top with walnuts. Chill completely.
