Fishandseafood - Combination - Lemon-herb Seafood Skewers

Lemon Herb marinade (Below)
4 oz. salmon steaks, cut into 1 inch cubes
4 oz. scallops
4 oz. swordfish steak, cut into 1 inch cube
24 uncooked med. shrimp in shells
8 large mushroom caps
1 large green (red) pepper, cut into l 1/2 inch pieces
4 med. green onions, cut into 1 inch pieces
8 fresh bay leaves


Make Lemon Herb marinade. in large bowl. Add swordfish, scallops, shrimp, mushrooms, bell pepper, onions and bay leaves, and let soak in the marinade 15 minutes and no longer than 1 hour. Then thread onto skewers, leaving space between each piece.

Heat coals grill over direct heat. Grill uncovered about 4 inches from med-high heat about 10 minutes, brushing occasionally with marinade and turning once, until fish flakes easily with fork. Heat remaining marinade to boiling; boil and stir 1 minute. Seve with kabobs. 4 servings



Lemon Herb Marinade:
1/2 c. olive oil
1 tbl. chopped fresh basil leaves
1 tbl. chopped fresh parsley
3 tbl. fresh lemon juice
1 tbl. capers
1 tsp./ freshly ground pepper
1/2 tsp. salt
1 medium green onion, chopped (1 Tablespoon)


Serve with seasoned rice.
