Cookies - Rolled Cookies Filled

1/2 cup shortening
1 cup sugar
1 egg
1/2 cup milk
1 teaspoon pure vanilla (not imitation)
3 1/2 cups flour
1/2 teaspoon salt
4 teaspoons baking powder

Preheat oven to 350 degrees.

Cream shortening, sugar, egg, milk and vanilla.

Add flour, salt and baking powder. Mix well. Set aside.

2 tablespoons flour
1 cup raisins
1/2 cup water
1/2 cup sugar

Place all filling ingredients in saucepan.

Cook slowly until clear and thick, using a low heat, stirring constantly to prevent scorching and/or

Roll out dough until thin and cut into rounds with a cookie cutter.

Place 1 teaspoon of filling on a round.

Place another round on top. Seal well.

Place on greased baking sheets and bake for 12 to 15 minutes, until golden brown.

2 3/4 cups sifted flour 2 teaspoons baking powder 1/4 teaspoon salt 3/4 cup butter 1 cup sugar 2 unbeaten eggs 1 teaspoon vanilla Sift together flour, baking powder and salt. In mixer bowl, cream 3/4 cup butter, gradually add 1 cup sugar creaming well. Add 2 unbeaten eggs and vanilla and continue to beat well. Blend in dry ingredients. Chill dough 1 to 1 1/2 hours. Preheat oven to 400° F.Roll out dough one third at a time on floured surface to 1/8 inch thickness. Cut into 2 1/4 inch rounds. Place half of rounds on ungreased baking sheets.
