Cookies - Pressed Cookies Swedish Macaroons

1 1/3 cups finely ground blanched almonds
1 1/2 cups powdered sugar
grated lemon rind
dash of salt
2 egg whites


Preheat to 300. Grease cookie sheets.

Mix the dry ingredients together, then add the egg whites and mix. Place dough in a pastry bag with a star tip and force onto cookie sheet.

Bake for 30 minutes. Remove from cookie sheet while still warm.

These should be light golden brown but soft inside.

1 cup butter, softened 2/3 cup sugar 3 egg yolks 1 teaspoon almond extract 2 1/2 cups all-purpose flour Heat oven to 400 degrees. Mix butter, sugar, egg yolks and flavoring thoroughly. Work in flour. Using one-fourth at a time, force dough through a cookie press onto ungreased baking sheet in desired shapes. Bake 7 to 10 minutes, or until set but not browned. Yield: 6 dozen You can tint the dough, sprinkle colored sugar on cookies before baking, or decorate as desired.
