Cookies - Lighter Pumpkin Spice Bars

2 cups sugar
3/4 tsp. salt
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. ginger optional
1/4 tsp. cloves optional
1/2 cup oil
1/2 cup applesauce
1 (15 oz) can Pumpkin
2 eggs
1/2 cup raisins optional

Preheat oven to 350° F and grease a 9 x 13 pan.

Mix wet ingredients together. Add dry. Mix 2 min. Pour into prepared pan and bake 35 -45 min.

Cream Cheese Frosting:
3 oz. light cream cheese, softened
1/2 stick softened butter
1 tsp. vanilla
1 3/4 cup powdered sugar
1 Tbl. milk
1/2 cup walnuts optional

Mix 1st. five ingredients altogether and sprinkle with walnuts.

1 cup flour 1/2 cup margarine 1/4 cup powdered sugar 2 eggs 5 tablespoons lemon juice 1 cup sugar 1/2 teaspoon baking powder 1 cup coconut Preheat oven to 400 degrees.Mix the 1 cup flour, margarine and powdered sugar like a pie crust. Press into a 9"x9" pan. Bake at 400° for 10-15 minutes. Beat together remaining ingredients and pour into crust. Bake at 350° for 25 minutes. Cool and cut into squares. Notes : Double recipe for 10"x15" pan.
