Cookies - Lemon Cheesecake Squares

1/2 cup graham cracker crumbs
1/4 teaspoon ground Cinnamon
Nonstick cooking spray
2 pkgs. (8 ounces each) Neufchatel or light cream cheese softened
1 cup part-skim ricotta cheese
1/2 cup sugar
2 teaspoons Pure Vanilla Extract
2 teaspoons lemon extract
2 eggs plus 2 egg whites
Fresh fruit (optional)

Combine cracker crumbs and cinnamon. Spread evenly in bottom of a 13 x 9 x 2-inch baking pan coated with cooking spray.

With an electric mixer, beat together the next 5 ingredients until smooth. Add eggs and egg whites, beating well after each addition. Carefully pour over crumb mixture.

Bake in 350 degree F oven (325 for dark pans) 20-25 minutes or until cheesecake is lightly browned on edges and almost set in center. Let cool 30 minutes. Cover and chill overnight. Top with fresh fruit.

1 (18 1/4 ounce) package lemon or yellow cake mix 1/2 cup (1 stick) butter, softened 1 egg plus 3 egg yolks 2 cups finely crushed saltine crackers (4 ounces) 1 (14 ounce) can sweetened condensed milk 1/2 cup bottled lemon juice from concentrate Preheat oven to 350 degrees. With mixer, beat cake mix, butter and 1 egg in large bowl till crumbly. Stir in saltine crumbs. Set aside 2 cups crumb mixture. Press remaining crumb mixture on bottom of greased 13x9 inch baking pan. Bake 15-20 minutes or till lightly golden. With mixer or wire whisk, beat 3 egg yolks

Crust:1/2 cup butter softened 1-1/3 cup all purpose flour 1/4 cup sugar Filling: 2 eggs 3/4 cup sugar 2 tablespoons all purpose flour 1/4 teaspoon baking powder 3 tablespoons lemon juice Confectioners' sugar Preheat oven to 350 degrees. In 1 1/2 quart mixer bowl, combine crust ingredients. Mix on low speed until blended (1 minute). Pat into ungreased 8 inch square baking pan. Bake near center of 350 degree oven for 15 to 20 minutes or until brown on edges. Meanwhile, prepare filling. Pour filling over partially baked crust. Return to oven for 18 to 20 minutes
