Casseroles - Poultry Chicken And Rice One Dish

One-Dish Chicken Broccoli Rice

2 tablespoons margarine
1 pound skinless boneless chicken breast -- cut into thin strips
2 cups frozen broccoli cuts
3/4 cup thinly sliced carrots
1 can cream of broccoli soup
1 cup milk
1/8 teaspoon pepper
1 1/4 cups quick-cooking rice -- uncooked

In skillet, in hot margarine, cook chicken, ½ at a time, until browned. Add broccoli and carrots. Cook
until tender-crisp.

Stir in soup, milk and pepper. Heat to boiling. Reduce heat to low. Cover; simmer 10 minutes or until veggies are tender.

Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork before serving.

1 c. raw rice 2 c. boiling water 1/2 c. chopped celery(opt) 1 can cream of mushroom soup 1 can cream of celery soup 1 pkg. dry onion soup mix 1 fryer chicken Combine first 5 ingredients and spread in large cake-type pan. Lay pieces of chicken on top of rice mixture. Sprinkle with onion soup. Cover, bake 2 1/2 hours at 350'; uncover for the last 1/2 hour.

1 C rice 2 C water 1 chicken cube (or 1 tsp. ckn.bouillon powder) 1 pkg. onion soup mix 1 Can sliced mushrooms some green pepper, diced Mix water and cube(or powder) to dissolve. Mix with soup mix, mushrooms, raw rice etc. Put into casserole. Brown chicken pieces or pork chops and set on top of rice mix. Cover. Bake 1 1/4 hour at 350.
