Casseroles - Beef - Fandango

1 pound lean, ground beef
1 medium onion, chopped
1 can (8 ounces) mushrooms, drained
1 or 2 cloves garlic, crushed
1 teaspoon oregano
2 packages frozen chopped spinach, thawed
1 can condensed cream of celery soup
1 cup sour cream
1 tablespoon uncooked rice
Salt and pepper
1 package (6 ounces) sliced Mozzarella cheese

Brown meat, onion, mushrooms, garlic and oregano. Spoon into 2-quart casserole. Stir in spinach, soup, sour cream, rice, salt and pepper. Put cheese (grated, or cut in strips) on top of casserole. Bake in 350 degree oven for 35-45 minutes.

1 pound hamburger 1/2 small onion -- chopped 3/4 cup Pace mild salsa 1/2 package taco seasoning mix 1/4 cup water 1 cup frozen whole kernel corn 1/2 cup sliced ripe olives -- drained 1 small Jiffy corn muffin mix 1 cup cheddar cheese -- shredded Preheat oven to 350 degrees F.Cook hamburger and onion until no longer pink; drain fat. Stir in salsa, taco seasoning and water; bring to a boil. Reduce heat to low and simmer until thickened. Stir in corn and olives. Spoon into 9" square (or 11 x 7 rectangular) baking dish, sprayed lightly with Pam. Prepare

2 (16 ounce) jars Taco Bell "Pour 'N Simmer taco seasoning 2 (25.48 ounce) boxes Tyson Beef Fajita Meals for 2 1 (15.5 ounce) can black beans, rinsed and drained 1 (4.5 ounce) can chopped green chilies 1 (8 ounce) package Mexican blend shredded cheese Preheat oven to 375 degrees. Spray a 13 x 9 inch baking pan with cooking spray. Spread 1/2 jar of Taco Bell sauce in the bottom of the pan. Cut 4 of the tortillas in half and cover the bottom of the pan. Top with both packages of the fajita meat, drizzle with the remaining 1/2
