5 1/2 ozs. bittersweet chocolate
11 tbsps. unsalted butter
3 large egg
3 large egg yolks
6 tbsps. sugar
5 tbsps. flour

Preheat oven to 325 degrees. Butter and flour six 6-oz. custard cups.

Mix chocolate and 11 tbsp. butter in metal bowl. Set over saucepan of simmering water; stir until smooth. Cool slightly.

Using electric mixer, beat eggs, yolks and sugar in bowl until pale and thick, about 10 minutes.
Reduce speed; gradually beat in flour.

Add chocolate mixture and continue to beat until thick and glossy, about 5 minutes. Divide among prepared cups.

Bake until cake is set around edges but center moves slightly when cup is moved, about 12 minutes.
Cool slightly.

Run sharp knife around edge of cups and turn out onto plates.

Notes: Use high quality chocolate, preferably Valrhona

Serving Ideas: Serve warm with vanilla ice cream, Chambord, etc.

1 cup margarine 2 cups sugar 6 whole eggs 1 (12ounce) pkg. vanilla wafers-crushed 1/2 cup milk 1 (7ounce) pkg. or can flaked coconut 1 cup chopped pecans Preheat oven to 300° F. and grease and flour a tube pan.Cream margarine; add sugar and beat until fluffy. Add eggs, one at a time. Add crushed vanilla wafers, alternately with milk.Fold in coconut and nuts. Put in prepared pan and bake for 1 1/2 -2 hours. Cool and turn out on cake plate. Can be dusted with powdered sugar.

1 c. flour 1/2 c. melted butter 2 Tbsp. brown sugar pinch of salt pinch of baking powder Topping for Cakes: 1 1/4 c. brown sugar 1 tsp. vanilla 2 eggs, beaten 1/2 c. chopped walnuts 1/2 c. coconut 2 Tbsp. flour 1/2 tsp. baking powderMix flour, butter, brown sugar, salt and baking powder together; press in the bottom of an 8 x 9-inch pan. Bake at 375 degrees for 10 minutes. Top with topping. Mix topping ingredients together; spread on top of baked part. Bake again about 15 to 20 minutes or until done. Let partially cool.
