Cakesandfrostings - Cake Peach Cake

1/2 cup sugar
1/2 cup flour
1 tsp. baking powder
1/2 cup milk
1/4 cup margarine
2 cups juicy ripe peaches
3/4 cup sugar
1 tbls. lemon juice

Preheat oven to 350 degrees F.

Mix 1/2 cup sugar, flour, baking powder, and milk. Cut margarine into small pieces and put in the bottom of baking dish. Pour batter into dish (batter does not have shortening).

Combine peaches with 3/4 cup sugar, and lemon juice. Spoon over batter in dish.

Bake 30-35 minutes at 350º. The cake like batter will rise to the top, and peaches will be on bottom. Serve hot or cold, with or without ice cream.

Note: One pound of peaches equals approximately: * 3 medium size peaches * 3 cups peeled and sliced
* 2½ cups peeled and diced * 2 cups peeled and pureed

2 cups flour 1 1/4 cups sugar 1 1/4 cups sliced peaches 2 1/2 teaspoons baking powder 1 teaspoon salt 1/3 cup shortening 1 teaspoon vanilla 1 cup milk 1 large egg 1/2 cup sugar 1 tablespoon cornstarch 1 cup boiling water 2 tablespoons butter 1 teaspoon vanilla CAake: Put sugared peaches on bottom of greased sheet cake pan. Mix other ingredients (baking powder through egg) and pour over peaches. Bake at 350 F for 45 minutes. Vanilla Sauce (optional): Mix sugar and cornstarch in small sauce pan. CAKE: 1 box yellow butter cake mix 1/2 cup vegetable oil 4 eggs 1 (11 oz.) can mandarin oranges, undrained FROSTING: 3 oz. pkg. instant vanilla pudding mix 1 large can crushed pineapple, drained 9 oz. container Cool Whip DIRECTIONS: Preheat oven to 325 degrees F. Grease and flour two 9-inch round cake pans. Mix cake mix, oil, and eggs at medium speed of an electric mixer for 2 minutes. Blend in the oranges and their juice. Divide between the cake pans and bake for 30 minutes.
