Bread - Sweet Bread Apple Pecan Bread

1 3/4 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup orange juice
1/3 cup (5 1/3 tablespoons) unsalted butter, melted and cooled slightly
2 large eggs, lightly beaten
1 1/2 cups coarsely chopped golden Delicious apples
1/2 cup coarsely chopped pecans

1/4 cup brown sugar
1/4 cup coarsely chopped pecans
1/2 teaspoon ground cinnamon

Preheat oven to 350 degrees. Grease a 9 x 5 x 3-inch loaf pan.

In a large bowl, sift together flour, sugar, baking powder and salt, making a well in the center. Set aside. Stir in liquid ingredients until just combined, being careful not to overmix. Gently stir in apples and pecans. Pour batter into prepared pan. Combine ingredients for topping. Sprinkle over top of batter. Bake for 50-60 minutes or until toothpick inserted into center of loaf comes out with moist crumbs attached.

Makes 1 loaf

2 cups self-rising flour 1/4 cup sugar 1 1/2 teaspoons ground cinnamon 2 eggs, beaten 3/4 cup apple butter 1/4 cup melted butter 2 Tablespoons apple juice 1/4 cup chopped nuts 1/2 cup raisins Preheat oven to 350ºF. Combine flour, sugar and cinnamon. Set aside. Combine eggs, apple butter, butter and apple juice. Add to flour mixture, blending well. Stir in nuts and raisins. Pour into a greased 9 x 5 x 3-inch loaf pan. Bake at 350º F. for 55 minutes. Cool 10 minutes before removing from pan.
