Appetizers - Spread - Pimento Cheese Spread

8 oz. mild cheddar cheese, shredded
8 oz. sharp cheddar cheese, shredded
8 oz. Velvetta (process cheese spread)
2 tbsp. sugar
1 tbsp. vinegar
1/2 ts.p pepper
1 1/2 cups mayonnaise
8 oz. diced pimento, drained


Combine cheeses in a food processor. Process until smooth. Add remaining ingredients except pimento and continue to process until ingredients are combined. Stir in pimento.

Yield - 4 cups

8 ounces extra sharp cheddar cheese, coarsely grated 8 ounces Monterey Jack cheese with Jalapene, coarsely grated 2 Tablespoons coarsely grated onion 1 (7 ounces) jar diced pimientoes, drained 1 jalapeno chile, seeded and chopped, (optional) 4 tablespoons mayonnaise Pepper sauce to taste Combine cheeses, onion, pimientos and jalapeno in a medium bowl. Add mayonnaise. Stir together well and add pepper sauce to taste.Serve with your favorite crackers. Makes 4 cups
