Appetizers - Seafood Crab Meat Parmesan Canapes

12 slices homemade type white bread, crusts discarded and bread cut into 4 triangles
1 cup fresh lump crab meat, picked over
2/3 cup mayonnaise
2/3 cup grated Parmesan cheese
4 scallions, chopped fine
1 teaspoon lemon juice


Preheat oven to 400°F.

Toast bread on a baking sheet in oven until golden, about 5 minutes. In a bowl stir together remaining ingredients with salt and pepper to taste.

(Toasts and crab-meat mixture may be made 1 day in advance.)

Reduce oven to 375°F. Spread crab-meat mixture on toasts and arrange on baking sheet. Bake in middle of oven until puffed, about 10 minutes.

3/4 stick butter or margarine -- preferably butter 2 tablespoons mayonnaise 1/2 teaspoon seasoned salt 1/2 teaspoon garlic powder 7 oz. jar sharp cheddar cheese -- Old English 7 ounces crabmeat 1 package English muffins Combine all ingredients. Split English Muffins and spread mixture on halves. Cut into fourths and place on a cookie sheet. Broil until golden brown. May be frozen before broiled for later use. Note: The recipe doesn't call for it but I would stir the crab around in a non-stick skillet first to insure that it was cooked thoroughly.

1 lb crabmeat 8 0z. cream cheese 1 Tbsp. lemon juice 1 Tbsp. minced green onion Salt and pepper to taste 1/2 cup mayonnaise 1/2 tsp Worcestershire sauce 1 cup grated cheddar cheese Preheat oven to 375.Whip cream cheese and lemon juice. Add remaining ingredients and mix thoroughly. Spoon into a small baking dish and top with cheddar cheese. Bake for 20 minutes or until slightly puffy and cheese has melted . Serve with hot crusty bread or crackers.
