Appetizers - Bruschetta - Bruschetta By Queen Bee

3 tablespoons olive oil
2 tablespoons water
2 tablespoons minced fresh basil
1 loaf Italian bread(10 ounces), cut into 20 pieces
2 medium-size tomatoes, peeled, seeded and coarsely chopped (yield 1 3/4 cups)
1/2 teaspoon salt

Preheat the oven to 400°F.

In a small saucepan, heat the oil and water over low heat.

Add the basil and garlic and cook uncovered for 4 minutes.

Remove from the heat and let stand for 10 minutes.

In a seive set over a bowl, strain the mixture, pressing on the solids to extract all the liquid.

Set aside both the solids and liquid.

Using a pastry brush coat 1 side of each bread slice with the reserved liquid and arrange on a large baking sheet.

Bake for 10 minutes or until crisp.

In a small bowl, combine the the tomatoes and salt.

Add the reserved solids to the tomatoes and let stand for 30 minutes.

Spoon a heaping tablespoon of the mixture onto each piece of toast and garnish with whole basil leaves if you like.

Makes 20 appetizers.

6 plum tomatoes...chopped finely 2 teaspoons of chopped garlic fresh cracked black pepper Salt to taste1/2 cup olive oil 2 loaves french bread (bagettes are best)whole clove of garlic Mix together the chopped tomatoes, garlic, salt and fresh ground pepper.Pour 1/4 cup of olive oil over tomato mixture and gently toss together.Slice bread on the diagonal in thin slices, approx 1/2 inch thick. 1 large loaf Italian country white bread 4 garlic cloves, peeled and crushed very lightly olive oil Heat the grill or preheat oven to 450 degrees F. Slice bread 1/2-inch thick and grill both sides until golden and toasty, being careful not to burn. If using oven, spread slices on baking sheet and bake about 4 minutes per side. Brush warm bread with olive oil on one side and then gently rub that side with garlic. Do not overdo it or the bread will taste bitter. Serves 4.
