Appetizers - Beef - Reuben Roll-ups

2 pkgs. (8 oz. each) refrigerated crescent rolls
1 pkg. (2.5 oz.) corned beef, chopped
1/2 cup sauerkraut, drained, squeezed dry and chopped
1/4 cup Thousand Island dressing
1 cup (4 oz.) finely shredded Swiss cheese

Preheat oven to 375 F. Unroll crescent dough; separate into 8 rectangles. Press perforations together to seal.

Spread about 1 1/2 tsp. dressing evenly onto each rectangle; top with chopped corned beef, sauerkraut, and cheese. Starting at shortest side, roll up each rectangle, jelly roll fashion; press seams together to seal. Cut each roll into four 1 inch thick slices. Place cut sides down on a 15" round baking stone.

Bake 20-22 minutes, or until golden brown. Serve warm with additional Thousand Island dressing for dipping, if desired.

Yield: 32 roll-ups

1 lb ground beef1 medium onion, chopped1 medium head of cabbage, shredded 1 (1 lb) loaf of frozen bread dough, or hot roll dough, thawedPreheat oven to temperature specified on bread dough or hot roll dough.Lightly grease a cookie sheet.Brown beef in a skillet. Remove beef and set aside.Saute onion in drippings until lightly browned, then drain and reserve. Discard drippings.In a bowl, combine beef, onion and cabbage. Tear off a chunk of bread or hot roll dough and flatten to about size of a small hamburger bun.Place 1/4 cup beef mixture on top, and cover with another flattened dough ball.

1 lb lean ground beef 1 cup seasoned bread crumbs 1/4 cup chopped Italian parsley 6 -8 T grated Parmesan cheese Salt and pepper to taste 2 eggs slightly beaten Mozzerella, cut in julienned strips about 1 inch long and 1/4 inch in diameter. All purpose flour Oil for frying Lemon wedges or favorite sauce Combine beef, bread crumbs, parsley, grated cheese and salt and pepper, eggs and mix well. Mix Very Well. Make sure mixture is moist but not gooey. If it is dry add a little water. Form croquettes the size you desire. Make it oblong and indent
