Vegetarian - Fool M'dammas

Serves 4

2 tins chick peas drained and rinsed or 1 lb. dried beans, cooked and drained
2 cloves garlic - crushed;
1/2 cup olive oil
juice 1 lemon (or to taste)
1 teaspoon salt (taste 1st)
1/4 teaspoon black pepper
chopped parsley

Mix drained and rinsed peas with everything else. Mix well. serve hot or cold.

Sprinkle with more chopped parsley.

1-1/2 cups onion -- chopped5 cloves garlic -- sliced in half horiz1 (15 oz.) can red kidney beans -- rinsed & drained 1 (15 oz.) can pink beans or black beans -- rinsed & drained 1 bay leaf1 tsp. dried mexican oregano -- or reg. oregano 2 tbsp chili powder (commercial or homemade) 1 tsp. ground cumin 1 tsp. dried coriander 1 tsp. crushed red pepper flakes 1 cup tomato juice 1 cup cooked brown rice Salsa -- your favorite Garnishes scallions -- chopped Fat Free Sour Cream cilantro -- chopped Heat a large nonstick skillet over medium heat.

2 cups cooked dry beans (1 cup dry) 1 1/2 cups bread crumbs 2 eggs 1/2 cups milk 1 tsp. salt 1 tsp. pepper 1 1/2 tsp powdered sage a little flour 2 Tablespoons of fat Mash the 2 cups of beans, stir in the breadcrumbs. Mix eggs and milk into a separate bowl, beat. Add to the bean mixture. Add the salt, pepper and sage and mix well. Make bean mixture in patties, dredge with a little flour to help them brown nicely. Fry them in a skillet in the 2 T of fat. Brown both sides over medium heat.
