Vegetarian - Entree - Fool Medemmas

Fava beans are commonly eaten as a breakfast food in Egypt, The ingredients tend to be common for the dish but may be varied in their quantities.

1 (16-ounce) can cooked fava beans
1 large onion, chopped
1 large tomato, diced
1-1/2 Tablespoons olive oil
1 teaspoon cumin powder
1/4 cup parsley, chopped
Juice of 2 lemons
Salt, pepper, and red chili pepper to taste
Pita bread (optional)

Pour the beans into a pot and bring to a boil. Mix them well and add remaining ingredients.
Bring to a boil again, then reduce to medium heat and cook for about 5 minutes. This dish is usually eaten with pita bread.

2 cups Cooked pinto beans 1/2 cup Whole wheat breadcrumbs 1/2 cup Onion, minced 1 Garlic clove; minced 1/2 cup Tomato sauce 1/8 tsp. Fennel seed, crushed 1/8 tsp. Dried red pepper 1/8 tsp. Dried basil; -OR- 1/2 tsp. -Fresh basil 1 1/2 tsp. Chopped fresh parsley Salt; to taste Mushroom-Red Pepper Sauce: 1 Red bell pepper; minced 1/8 cup Vegetable broth or water or more as needed 4 large Mushrooms; minced 1/4 cup Onion; minced Salt; to taste 1/8 tsp. Celery seed 1/2 tsp. Chopped fresh oregano 1 dash Black pepper Whole wheat flour -- (pastry flour works best)

Crespelle "Crepes" 2 eggs 1 cup flour Unbleached Pinch of salt 1 cup milk 1 Tablespoons melted butter (if using salted butter omit salt) Blend together and let stand for at least 30 minutes before making (flour needs to expand and batter thicken slightly). Heat an 8 inch saute pan and butter lightly (pan should be hot). Pour 1/4 cup of batter while tilting pan to distribute evenly over bottom of pan. While holding over heat continue to swirl for one minute and then check underside to see if it is brown. If crepe is browned and
