Vegetables - Zucchini - Zucchini Crisp By Cheesehead

5 cups zucchini
1/3 cup sugar
1 teaspoon cinnamon
1/4 cup lemon juice

Zucchini needs to be peeled, seeded and cut into slices to resemble apples.
Cook the first zucchini in saucepan with water for 10 minutes or until the zucchini slices become translucent. Drain.

Sprinkle with sugar, cinnamon and lemon juice, put in a 9 x 13 pan with minute tapioca in bottom (sprinkle a bit in the bottom). Arrange the slices over the tapioca evenly

Mix following until crumbly:
1/3 cup butter or margarine
1/2 cup brown sugar
1/2 cup flour
1/2 cup oatmeal (quick cooking)

Sprinkle over fruit slices. Bake at 45 minutes at 350'.

2 medium zucchini 1/2 lb. bulk sausage1/4 cup onion, chopped 1/2 cup shredded Cheddar cheese 1 (8 oz.) pkg. corn muffin mix Preheat oven to 350 degrees F.Shred 1/3 cup of zucchini and cut rest into slices. Brown sausage and reserve drippings. Remove sausage and cook zucchini and onion in drippings for 5 minutes. In greased baking dish arrange zucchini slices on bottom. Prepare corn muffin mix and stir in shredded zucchini, sausage and cheese. Spread over slices. Bake at 350 degrees for 25 to 30 minutes or until golden brown. Loosen sides and invert on
