Vegetables - Vegetable Casserole

Vegetable Casserole
1 (10-oz.) pkg frozen broccoli
1 (10-oz.) pkg frozen cauliflower
1 (10-oz.) pkg frozen brussel sprouts
1 (10-oz.) pkg frozen peas with pearl onions
1 (10 3/4 oz.) can cream of mushroom soup
1 (8 oz.) jar cheese whiz

Preheat oven to 350 degrees F.Butter a 2-quart casserole.

Par-cook vegetables by just bringing to a boil. Remove from heat and drain.

Layer vegetables in a 2-quart casserole.

In a sauce pan heat the soup and cheese whiz. Pour over vegetables, top with buttered bread or cracker crumbs.

Bake for about 45 mintutes.

2 cups chopped celery 2 cups cooked corn -- or frozen kernel corn 1 onion -- chopped 2 tablespoons diced green pepper 2 1/2 cups cold water 1 tablespoon salt 1 cup cooked tomatoes 1/8 teaspoon pepper 4 tablespoons butter 3 tablespoons flour 2 cups milk -- scalded 1/2 cup grated cheddar cheese 1/2 cup diced pimiento 1/4 teaspoon paprika Combine the first 8 ingredients, heat to boiling and simmer 1/2 hour. Melt butter, blend in flour. Add milk gradually, stirring constantly; heat to boiling and cook 5 minutes. Add to vegetable mixture with cheese, pimiento and paprika. Heat until cheese

3 cups thinly-sliced onions 1/2 cup olive oil 4 green peppers, sliced 1 eggplant, peeled and thinly sliced 4 zucchini, thinly sliced 5 tomatoes, peeled and thinly sliced 3 cloves garlic, crushed 2 teaspoons salt 3/4 teaspoon freshly ground black pepper Sauté onions in 2 tablespoons of the oil for 5 minutes. Remove onions. Add 2 more tablespoons oil and sauté green peppers for 5 minutes. Remove peppers. Add 2 more tablespoons oil and sauté eggplant on each side for 2 minutes. Remove eggplant. Add remaining 2 tablespoons oil and sauté zucchini for 3 minutes. Arrange alternate layers of the sautéed
