Vegetables - Traffic Light Salad

1 pkg. fresh snow peas
2 cans baby corn, drained
2 red peppers, cut in thin slices
1 (11 oz.) can mandarin oranges, drained
3/4 cup Italian dressing (about)
Slivered almonds (optional)

Mix vegetables with Italian dressing. Gently stir in oranges. Chill.

Add optional almonds at serving time.

2 medium carrots, halved lengthwise and thinly sliced 1 cup fresh small mushrooms, quartered 1 cup canned black beans rinsed and drained 1 (8 ounce) can whole kernel corn drained 1 cup vegetable broth 1/2 cup pearl barley 1/3 cup parsley 1/4 cup bulgar 1/4 cup chopped onion 1/4 teaspoon garlic salt 1/2 cup shredded cheddar cheese Preheat oven to 350 degrees F.In 1 quart casserole combine all ingredients except cheese. Cover and bake in 350 degree oven for 1 hour or until barley and bulgar are tender. Stir once halfway through baking time. Sprinkle with cheese. Cover

1/4 cup olive oil 4 - 6 medium zucchini, thinly sliced 4 - 6 medium tomatoes, thinly sliced 4 - 6 cloves garlic, finely chopped 4 Tbls. chopped fresh basil or parsley 1/2 cup freshly grated Parmesan cheese Salt and freshly ground pepper to taste Preheat oven to 350 degrees F. Lightly coat a 9 x 13 inch baking dish with olive oil. Layer half the zucchini slices in the bottom of the pan. Cover with half the tomatoes.
