Vegetables - Squash - Fried Squash

1 cup squash, cooked and drained
1 egg
1 tblsp. sugar
1/2 tsp. salt
1 dash pepper
2 tblsp. evaporated milk
1 tblsp. onion, chopped
1/2 cup cornmeal
1/2 cup self-rising flour
oil for frying

Mash the cooked squash. Mix all together and form in small balls; drop into hot oil. Cook until brown.

1 medium acorn squash 2 oz. dried apricots, chopped (about 6 whole) 1 tablespoon golden raisins 1 tablespoon currants 2 tablespoons apricot preserves 1 teaspoon water dash of salt 1-2 tablespoons sliced almonds, toasted. Cut squash in half lengthwise, discard seeds and membranes. Place squash, cut side down, in a vegetable steamer. Place steamer over boiling water in a Dutch oven - cover and steam for 20 minutes or until squash is tender. While squash is steaming, combine remaining ingredients except almonds. When squash is tender, remove from steamer and spoon fruit mixture evenly into each squash half. Return to steamer

3 eggs 1 cup oil 2 1/2 cups sugar 1/2 tsp baking powder 3 tsp. vanilla 2 cups grated zucchini 3 cups flour 1 tsp. soda 3 tsp. cinnamon 1/2 tsp baking powder 1/2 cup raisins and or nuts 1 tsp. salt Beat eggs, add oil, sugar and vanilla. Stir in zucchini. Mix well. Sift together flour, salt, soda, cinnamon and baking powder. Mix well. Add nuts and raisins. Place in greased loaf pans and bake at 325 F. for 1 hour. Makes 2 loaves. Freezes well.
