Vegetables - Spinach - Spinach Bake

2 Onions chopped
1 lb. Mushrooms coarsely chopped
8 carrots coarsely chopped
1 zuchinni coarsely chopped
40 oz. fresh spinach chopped
1 Cup Matzah Meal
6 to 9 eggs (you decide the consistency you'd like best)
2 Telma chicken boullion cubes (or you can use veggie or onion)

Heat oven to 325 -- Prepare 9 x 13 pan -- grease well.
Saute onions, carrots, zucchini and mushrooms in 2 Tbl. oil for a few minutes until they just start to get a little soft.

Combine all ingredients together in a big bowl. Mix thoroughly (hands work best!)
Put into prepared pan. Bake 45 mins to 1 hour. Should be firm and set.

This also freezes really well.

(Andrea added: I think it would also work well if you wanted to add some grated cheese. I think Monterey Jack, Swiss or Mild Cheddar would work best.)

20 oz. frozen spinach -- thawed 2 c. Pepperidge Farm seasoned stuffing mix 4 eggs -- beaten 1 c. finely chopped onion 1/4 c. melted butter 1/2 c. parmesan cheese 1/4 t. oregano 1/2 t. pepper 1/2 t. garlic powder Mix all ingredients. Chill overnight. Roll into 1 1/2" balls. Bake 30 minutes at 350 degrees, 40 minutes if frozen.

Vegetables - Spinach Artichoke Dip
Great starter, served hot with corn tortillas 1/2 lb. of spinach 3 lb. sour cream 1/2 lb cream cheese 8 oz. artichoke hearts 1/2 tsp. garlic 3 oz. lemon juice 1/2 cup heavy cream salt and white pepper to taste Cook spinach for 1 minute in boiling water first, then place spinach in ice water. To make dip, mix together all ingredients in bowl, and salt and white pepper to taste. Place dip in a serving bowl topped with parmesan cheese and heat in microwave for 2 minutes. Serving suggestions: Serve hot with tortilla chips.
