Vegetables - Spinach Roll-ups

8 oz. cream cheese, softened
1 small packet Hidden Valley Ranch powdered dip mix (do not use the dressing mix)
1 cup mayo
2 green onions, finely chopped
1 box (10 oz.) frozen chopped spinach, cooked, well-drained, and cooled
10 or so flour tortillas

Combine the first 3 ingredients, mixing well. Add the green onions and spinach; stir until well blended. Spread on flour tortillas. Roll up, cover with Saran wrap, and let chill overnight. Slice and place on serving tray/plate.

These taste much better if you let them sit overnight (rather than making them a few hours before).

1 bunch spinach 1 orange peeled and diced 3-4 slices red onions 1/4 cup toasted nuts Dressing to taste Wash and clean spinach leaves and remove large stems. Place in salad bowl and add orange and onions broken into rings. Toss with dressing; top with nuts. Dressing: 1/4 cup raspberry vinegar or other fruity vinegar. 2/3 cup salad oil 1 large clove garlic 1 tsp. salt Place in small container and shake well. Remove garlic just before serving.

3 Tbs. Butter 1/2 Cup Flour 1 Small Onion, chopped 1/3-1/2 Cup Chicken Stock 8 oz. Velveeta Cheese 1/3 Cup Heavy Whipping Cream 10 oz. Frozen Chopped Spinach (squeeze out excess water) Dash of Tabasco Sour Cream In a saucepan over medium heat, combine butter, flour and onion to make a roux. Cook, stirring constantly, for two minutes. Add chicken stock and stir constantly over medium heat until you have a creamy consistency. Slowly add Velveeta (cut in small pieces) until melted. When cheese is melted, add whipping cream. Stir in drained spinach. Add Tabasco
