Vegetables - Spiced Potatoes

4 tbsp. veg oil
1 onion sliced thinly
2 garlic cloves crushed
2 tsp. black mustard seeds
1 1/2 tsp. ground coriander
1/2 tsp. ground turmeric
Pinch of chili powder
1/4 tsp. ground ginger
Pinch salt
1 lb. potatoes in 1 cm. dice

In a pan, warm oil and add onion garlic and spices and salt and cook for 2-3 minutes. Add potatoes and continue to cook for a few minutes before adding 5-10 fl. oz. water, enough to almost cover potatoes.

Bring to a simmer and cook, stirring gently until potatoes are tender. This will take 15-20 minutes. Water will reduce as it is absorbed by potatoes.

14-16 Red potatoes cooking oil or cooking spray 4 Tlbs. Gray Poupon Mustard 1 tsp. paprika 1 tsp. chili powder 1/8 tsp. cayenne pepper dash salt and pepper Preheat oven to 400. Spray or coat baking pan well. Place all ingredients except potatoes in a large bowl and blend well. Using tines of a fork prick potatoes several times. Toss potatoes into mixture and coat well and pour coated potatoes from bowl into baking pan. Bake 50-60 minutes, or till tender.

1 Pound bacon, diced 1 large onion, sliced 3 pound potato, sliced skin on 2 cloves garlic 1/2 pound fresh mushrooms, sliced 1 can Sprite, not diet 1 tsp salt 1/2 tsp pepper 1/4 cup Parsley Flakes 1/2 Pound cheddar cheese, grated Brown bacon in Dutch oven. Drain and add onion and garlic. Cook until clear. Add potatoes and mushrooms and mix well. Pour in Sprite. Sprinkle with salt and pepper. Cover and cook until potatoes are tender. Add parsley and cook another 5 minutes. Just before serving, top with cheese and serve after cheese melts.
