Vegetables - South Of The Border Tomato Salsa

2 large ripe tomatoes cored and cut into 1/4 inch cubes
1 small red onion minced
2 medium cloves garlic minced
3 tbs. minced coriander
2 tbs. lime juice
1-2 small jalapeno peppers minced - less if you wish


Place tomatoes, onion, garlic, coriander, lime juice and peppers in a medium bowl. Add salt to taste and mix gently.

1 pkg. Pillsbury refrigerated pie crusts -- (2 crusts in a pkg) 2 tbl. Dijon mustard 4 medium tomato -- peeled and sliced 4 oz. shredded cheddar cheese 4 oz. shredded white cheddar cheese ( or 1 pkg. 4-cheese blend) salt and fresh ground pepper 2 tbl. mayo or sour cream 3 tbl. grated Parmesan cheese Bake and cool one of the pie crust. Adjust oven temp. to 350 degrees F.Spread mustard on baked crust, covering bottom and sides. Arrange tomatoes on top of mustard, and cover with a layer of cheese. Sprinkle with salt and pepper.

1-2/3 cups chopped ripe tomatoes 1/2 large bell pepper, chopped 2 cups chopped onions 2 Tblsp. salad oil 1/3 cup sugar 1/2 cup vinegar 3 tsp. Accent or MSG (optional) 1/2 tsp. garlic salt salt and pepper to taste Combine tomatoes, bell pepper and onions. Set aside. Mix oil, sugar, vinegar, Accent, garlic, salt and pepper. Pour over vegetables. Place in covered jar and let stand several hours. Refrigerate.
