Vegetables - Snow Peas - Stuffed Snow Peas
Stuffed Snow Peas3 doz. fresh snow peas
3/4 c. whipped cream cheese, softened
2 T. orange juice
1 1/2 tsp. prepared horseradish
dash pepper
grated orange zest
Trim ends from peas. Place in steaming basket. Plunge into boiling water and remove immediately. Place peas in a bowl of ice water to cool quickly. Remove from water and refrigerate.
Combine remaining ingredients except zest. Stir until smooth; chill at least 1 hr.
Carefully slit one side of each pod. Spoon cream mixture into pastry bag fitted with No. 18 tip. Pipe cheese mixture into peas, about 1 1/2 tsp. each. Sprinkle with rind. Refrigerate until ready to serve.

Parmesan cheese, grated 2 pie shells, unbaked Nutmeg Cook spinach and drain well. Blend cream cheese into hot spinach. Allow to cool and add eggs. Divide Swiss cheese into pie shells and pour egg/spinach mixture on top. This should almost fill each shell. Top each with Parmesan cheese and nutmeg. Bake at 350 degrees for 40 minutes. Yield: 2 Quiche..12 servings This freezes well.

2 pkgs. Frozen chopped Spinach 2 (8 oz. pkgs) Cream cheese, softened 8 large eggs, well beaten with Salt and pepper 8 oz. Swiss cheese, grated 4 oz.
