Vegetables - Salsa By Chefshell

6 large vine ripened tomatoes (roasted if possible)
1-2 jalapenos, minced fine (roasted)
1 large white onion, minced (roasted)
1 bunch cilantro, chopped
1-2 cloves garlic, minced fine (roasted)
Juice of 1 lemon
Juice of 2 limes
2 tsp. cumin
2 tsp. salt
2 tsp. lemon pepper or Chili con limon seasoning
2 tsp. adobo seasoning (or pepper, salt, paprika, and lemon pepper)
1-2 tsp. sherry wine vinegar


Combine all ingredients.

Recipe is best if roasted vegetables are used, but fresh vegetables work well.

6 cups chopped ripe tomatoes, drained 2 tbls. minced garlic 2 tbls. cumin 2 tbls. coriander, ground 1 purple onion, chopped 2 or 3 jalepenos, seeds out, chopped Juice of 2 limes 3 tbls. salt (or more to taste)Combine all ingredients. 1 qt. whole tomatoes 1/2 cup chopped onions 1/2 tsp. Italian seasoning freshly ground pepper 2 slices Italian bread, toasted and broken into pieces Squish the tomatoes with clean hands. Put in a sauce pan with onion, pepper and the Italian seasoning. Bring to a boil and cook until onion is softened. Add torn, toasted bread, and serve. Serves 6 as a side dish. If using fresh tomatoes, just peel and proceed.
