Vegetables - Potatoes With Herb Butter

4 large baking potatoes
1/2 cup butter or margarine
1 tbsp. lemon juice
1 tbsp. chives -- chopped
1/2 tsp. dried whole chervil
1/2 tsp. dried tarragon
1/2 tsp. dried dill weed
1/4 tsp. hot sauce


Scrub potatoes. Cook in boiling water about 30 minutes or until tender. Drain and cut into 1/2" slices; arrange on a serving platter, and keep warm.

Combine remaining ingredients in a small saucepan; cook over low heat until butter is melted. Pour over potatoes. Yield: 4 servings.

2 lb. red 'new' potatoes, all equal in size 1 cup scallions, white parts and 3 inches of green, minced 1 tbsp. butter 1/4 tsp. nutmeg salt and pepper to taste 1 cup nonfat plain yogurt Quarter but do not peel potatoes.
