Vegetables - Potatoes Pancakes

2 eggs
2 Tbl. milk
2 Tbl. butter or margarine
2 Tbl. flour
3/4 tsp. salt
1/8 tsp. pepper
1/4 small onion, slices
2-3 tsp. rosemary (optional)
2 cups peeled, raw potatoes (3-5 depending on size)


Mix first 8 ingredients in blender container and 1 cup slices potatoes. Blend until there are no lumps. Add remaining potatoes. Blend again until there are no lumps.

For each pancake, pour 1/4 cup mixture onto hot well-greased griddle or frying pan and spread into a 4 inch cake.

Brown on first side: turn and brown on second side.
