Vegetables - Potato Salad - Potato Salad

Yield: 8 servings

2 pounds (about 6 large) red-skinned potatoes, cut into 1-inch cubes, cooked, drained and cooled
1/4 cup dry Nestle® Carnation® Instant Non-fat Dry Milk
1/4 cup water
1/4 cup Dijon-style mustard
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
2 cups (about 8 ounces) 1-inch green bean pieces
1 cup (1 large) chopped red bell pepper
1/4 cup (about 4 medium) sliced green onions
Lettuce leaves (optional)


Combine dry milk, water, mustard, salt and pepper in small bowl until well mixed.

Combine potatoes, green beans, bell pepper and onions in large bowl; add milk dressing and toss well to coat.

Serve immediately or refrigerate.

Serve over lettuce leaves.
