Vegetables - Peppers - Sweet Red Pepper Sauce

3 tbsp olive oil
3 large red bell peppers, stemmed, seeded, and chopped
2 large onions, chopped
2 cloves garlic, minced
salt and freshly ground pepper to taste
2 tbsp chopped fresh parsley


Heat oil in large, heavy skillet over medium heat. Add peppers, onions, and garlic; saute until onion is golden, stirring to prevent burning, about 15 minutes or longer. Transfer to blender or food processor and puree. Stir in seasonings and parsley. Serve warm

Yield: 4 Servings 2 large Very red sweet Peppers 2 tbl. Water to saute 2 cups Coarsely chopped onions 2 tsp. Minced garlic 1/2 tsp. Hot red pepper flakes (opt) 1 cup Vegtable stock Salt and Pepper to taste 1/4 cup Chopped Basil 1 lb. Cooked pasta Cut peppers lengthwise in half. Scrape away and discard stems, veins and seeds and chop peppers coarsely. Heat water in a large saucepan and add peppers. Cook, stirring, about 5 minutes (add more water if required). Add onions, garlic and red pepper flakes and cook, stirring, 2 minutes longer.
