Vegetables - New Potatoes With Chive Butter
1 - 1 1/2 lb. small new potatoes, scrubbed1/2 cup water
1/4 tsp. salt
1/4 cup butter
1 tbl. chpped fresh chives
Peel a strip around center of each potato.
In medium saucepan, combine potatoes, water and 1/4 tsp. salt; cover. Bring to a boil. Reduce heat; simmer 20-25 minutes or until tender and drain.
Transter to serving bowl; keep warm.
In same saucepan, melt butter; stir in chives. Season with salt and pepper. Pour over potatoes; toss gently to coat.
