Vegetables - Guacamole

1 large ripe avocado
1 Tbsp. lemon juice (or lime juice)
1/4 cup minced onion
1 Tbsp. finely diced green chilies
1 small tomato, seeded and finely chopped
1 garlic clove, minced
1/4 tsp. salt


Peel and pit avocado. Place in bowl with lemon juice. Mash with fork. Stir in remaining ingredients. Cover and chill. Yields about 1-1/2 cups.

Garnish with cucumber and tomato. Serve cold.
