Vegetables - Cucumber - Tzatziki Sauce By Bjh

1 pint yogurt
1 unpeeled cucumber, chopped fine
1 clove garlic, crushed
1/2 cup olive oil
Juice of 1/2 lemon
1 teaspoon salt
parsley


To the yogurt add the cucumber, garlic, olive oil, lemon juice, and salt. Blend well with fork. Top with parsley. Refrigerate.

1 tablespoon olive oil 1 teaspoon vinegar 1 tablespoon chopped garlic 1 cup Greek yogurt 1 medium cucumber -- peeled and small diced 2 teaspoons finely chopped fresh mint Salt Freshly ground black pepper Kalamata olives 1 Slices fried bread Whisk the olive oil, vinegar, garlic and yogurt and mint together. Season with salt and pepper.Fold in cucumber. Cover and refrigerate until chilled. Serve with black olives and slices of fried bread. Yield: about 2 1/2 cups

Vegetables - Cucumber -  Tzatziki Sauce
2 cups plain yogurt 2 large cucumbers 1 tablespoon minced garlic 1 tablespoon white vinegar 2 tablespoons olive oil salt and pepper to taste Put plain yogurt in cheesecloth-lined sieve over a bowl. Drain several hours or overnight in refrigerator. Peel, seed, and coarsely grate cucumbers. Drain well. Add garlic, vinegar, olive oil, salt and pepper to cucumbers and mix well. Add yogurt and blend. Chill for an hour, then serve with melba toast or pieces of pita bread. Makes 2 cups.
